FLUFFY YOGURT CAKE
INGREDIENTS:
- 4 EGGS
- 1 CUP SUGAR
- 1 CUP PLAIN YOGURT
- 1/2 CUP VEGETABLE OIL
- 2 CUPS ALL-PURPOSE FLOUR
- 1 TBSP BAKING POWDER
- 1 TSP VANILLA EXTRACT
- PINCH OF SALT
INSTRUCTIONS:

PREHEAT OVEN TO 180°C (350°F).
GREASE AND FLOUR A ROUND BAKING PAN. -
BEAT EGGS AND SUGAR UNTIL LIGHT AND FLUFFY.

ADD YOGURT, OIL, AND VANILLA.
MIX WELL. -
SIFT IN FLOUR, BAKING POWDER, AND SALT.
FOLD GENTLY UNTIL COMBINED. -
POUR BATTER INTO PAN.
SMOOTH THE TOP. -
BAKE FOR 35–40 MINUTES,
OR UNTIL A TOOTHPICK COMES OUT CLEAN. -
LET COOL, THEN CUT INTO SQUARES.
