FLUFFY YOGURT CAKE

INGREDIENTS:

  • 4 EGGS
  • 1 CUP SUGAR
  • 1 CUP PLAIN YOGURT
  • 1/2 CUP VEGETABLE OIL
  • 2 CUPS ALL-PURPOSE FLOUR
  • 1 TBSP BAKING POWDER
  • 1 TSP VANILLA EXTRACT
  • PINCH OF SALT

INSTRUCTIONS:

  1. PREHEAT OVEN TO 180°C (350°F).
    GREASE AND FLOUR A ROUND BAKING PAN.

  2. BEAT EGGS AND SUGAR UNTIL LIGHT AND FLUFFY.

  3. ADD YOGURT, OIL, AND VANILLA.
    MIX WELL.

  4. SIFT IN FLOUR, BAKING POWDER, AND SALT.
    FOLD GENTLY UNTIL COMBINED.

  5. POUR BATTER INTO PAN.
    SMOOTH THE TOP.

  6. BAKE FOR 35–40 MINUTES,
    OR UNTIL A TOOTHPICK COMES OUT CLEAN.

  7. LET COOL, THEN CUT INTO SQUARES.
