Ingredients (makes 6 mini pizzas):

  • 3 English muffins, split in half (to make 6 bases)
  • 4 large eggs, scrambled or fried
  • 1/2 cup cooked breakfast sausage, bacon bits, or diced ham
  • 1/2 cup shredded cheddar or mozzarella cheese (or a mix)
  • 2 tbsp milk or cream (for fluffier scrambled eggs)
  • Salt & pepper, to taste
  • Butter or nonstick spray
  • Optional toppings:
    • Chopped bell peppers, tomatoes, or green onions
    • Salsa or ketchup drizzle
    • Everything bagel seasoning

Instructions:

  1. Toast the English muffins until lightly crisp (helps prevent sogginess later).

  2. Scramble the eggs:

    • In a bowl, whisk eggs with milk, salt, and pepper.
    • Cook in a nonstick skillet over medium heat until just set.
  3. Assemble your pizzas:

    • Place toasted muffin halves on a baking sheet.
    • Layer each with:
      • A scoop of scrambled eggs (or a fried egg)
      • Crumbled sausage, bacon, or ham
