COTTAGE CHEESE PANCAKES

INGREDIENTS:

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup flour (all-purpose or oat flour)
  • 1/4 tsp baking powder (optional)
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • 1 tbsp sugar or honey (optional)
  • Butter or oil for cooking

INSTRUCTIONS:

  1. In a bowl, whisk the eggs.

  2. Add cottage cheese, flour, baking powder, salt, vanilla, and sweetener.
    Mix until combined. Batter will be a bit lumpy.

  3. Heat a non-stick pan or griddle over medium heat.
    Add a little butter or oil.

  4. Scoop 1/4 cup batter per pancake onto the pan.
    Cook 2–3 minutes per side until golden.

  5. Serve warm with syrup, fruit, or powdered sugar.
