COTTAGE CHEESE PANCAKES
INGREDIENTS:
- 1 cup cottage cheese
- 3 large eggs
- 1/2 cup flour (all-purpose or oat flour)
- 1/4 tsp baking powder (optional)
- 1/4 tsp salt
- 1 tsp vanilla extract (optional)
- 1 tbsp sugar or honey (optional)
- Butter or oil for cooking
INSTRUCTIONS:

In a bowl, whisk the eggs.

Add cottage cheese, flour, baking powder, salt, vanilla, and sweetener.
Mix until combined. Batter will be a bit lumpy. -
Heat a non-stick pan or griddle over medium heat.
Add a little butter or oil. -
Scoop 1/4 cup batter per pancake onto the pan.
Cook 2–3 minutes per side until golden. -
Serve warm with syrup, fruit, or powdered sugar.
