Cheesy Stuffed Meatloaf Bites
Ingredients:
For the Meat Mixture:
- 1 lb (450g) ground beef (or mix with pork)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried Italian herbs (or parsley)
For the Filling:
- 4 oz (115g) cheddar, mozzarella, or any melty cheese, cut into small cubes
For the Glaze:
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard or regular mustard

Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or a baking sheet with parchment paper.

Make the meat mixture:
In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, Worcestershire, salt, pepper, and herbs. Mix just until combined—don’t overmix. -
Form the bites:
Take about 2 tablespoons of the meat mixture, flatten it slightly in your hand, place a cube of cheese in the center, and shape it into a ball, sealing the cheese inside. Repeat for all. -
Place in tin or on sheet and press lightly to flatten the bottoms.

In a small bowl, mix ketchup, brown sugar, and mustard. Spoon a bit on top of each bite. -
