Cheesy Stuffed Meatloaf Bites

Ingredients:

For the Meat Mixture:

  • 1 lb (450g) ground beef (or mix with pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs (or parsley)

For the Filling:

  • 4 oz (115g) cheddar, mozzarella, or any melty cheese, cut into small cubes

For the Glaze:

  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard or regular mustard

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or a baking sheet with parchment paper.

  2. Make the meat mixture:
    In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, Worcestershire, salt, pepper, and herbs. Mix just until combined—don’t overmix.

  3. Form the bites:
    Take about 2 tablespoons of the meat mixture, flatten it slightly in your hand, place a cube of cheese in the center, and shape it into a ball, sealing the cheese inside. Repeat for all.

  4. Place in tin or on sheet and press lightly to flatten the bottoms.

  5. Make the glaze:
    In a small bowl, mix ketchup, brown sugar, and mustard. Spoon a bit on top of each bite.

  6. Bake for 18–22 minutes, or until the bites are cooked through (165°F/74°C inside) and the tops are caramelized.

  7. Cool slightly and serve!
    Enjoy warm while the centers are still gooey!
