Here's a delicious and easy recipe for Cheesy Chicken Fritters – crispy on the outside, juicy and cheesy on the inside:


Cheesy Chicken Fritters Recipe

Ingredients:

  • 1.5 lbs (about 700g) boneless, skinless chicken breasts, finely chopped
  • 1 cup mozzarella cheese, shredded
  • 2 large eggs
  • 1/3 cup mayonnaise or sour cream
  • 1/4 cup all-purpose flour (or almond flour for low-carb)
  • 2 cloves garlic, minced
  • 1/4 cup green onions or chives, finely chopped
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Prep Chicken: Finely chop the chicken breasts into small pieces (almost minced but not ground). You can also pulse it briefly in a food processor.

  2. Mix Fritter Base: In a large bowl, combine the chopped chicken, cheese, eggs, mayo, flour, garlic, green onions, salt, pepper, and paprika. Mix well until fully combined.

  3. Chill (optional but recommended): Cover and refrigerate the mixture for 15–30 minutes. This helps it firm up for easier shaping.

  4. Cook Fritters:

    • Heat a few tablespoons of oil in a skillet over medium heat.
    • Scoop about 2 tablespoons of the mixture per fritter into the pan, flatten slightly with a spatula.
    • Fry 3–4 minutes per side, or until golden brown and fully cooked through.
  5. Drain: Place on paper towels to remove excess oil.

  6. Serve: Delicious with sour cream, ranch, garlic sauce, or a side salad.


Tips:

  • Add fresh herbs like dill or parsley for extra flavor.
  • For a spicy kick, add a pinch of chili flakes or diced jalapeños.
