Bang Bang Chicken Fried Rice

Ingredients:

  • 2 cups cooked jasmine or long-grain rice (preferably chilled)
  • 1 lb cooked chicken breast or thighs, chopped/shredded
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 2 green onions, sliced

Bang Bang Sauce:

  • 1/3 cup mayo
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha (adjust to spice level)
  • 1 tbsp honey
  • 1 tsp rice vinegar

Instructions:

  1. Whisk the Bang Bang Sauce ingredients together in a bowl. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add garlic and stir for 30 seconds.
  3. Add peas & carrots, cook for 2–3 minutes until tender.
