Ingredients
๐ 2 lbs oxtail, cut into pieces
๐ง Salt & pepper to taste
๐ฟ 1 tsp thyme (dried or fresh)
๐ง 4 cloves garlic, minced
๐ง 1 onion, chopped
๐ถ️ 1 small red chili (optional)
๐ฅ 2 carrots, diced
๐ 1 can diced tomatoes
๐ฅ 2 tbsp tomato paste
๐ฅซ 2 cups beef broth
๐ท 1/2 cup red wine (optional)
๐ข️ 2 tbsp oil for searing
Instructions
1️⃣ Season & Sear: Season the oxtail with salt, pepper, and thyme. Heat oil in a large pot and sear the oxtail until browned on all sides. Remove and set aside.
2️⃣ Sautรฉ Veggies: In the same pot, sautรฉ onion, garlic, and chili until fragrant. Add carrots and cook for a few minutes.
3️⃣ Deglaze & Simmer: Pour in the wine (if using) and scrape the bottom of the pot. Add tomato paste, diced tomatoes, and broth. Stir well.
4️⃣ Slow Cook: Return the oxtail to the pot, cover, and simmer for 3–4 hours until the meat is fall-off-the-bone tender.
5️⃣ Final Touch: Adjust seasoning, garnish with fresh herbs, and serve with rice or mashed potatoes. ๐๐ฅ
