Pecan Cheesecake Bundt Cake

 









Ingredients:


For the cake:


2 ½ cups almond flour ๐ŸŒฐ


1 cup granulated sweetener (monk fruit or erythritol) ๐Ÿฏ


1 tsp baking powder ๐Ÿฅ„


½ tsp salt ๐Ÿง‚


1 tsp vanilla extract ๐ŸŒฟ


½ cup butter, melted ๐Ÿงˆ


4 large eggs ๐Ÿฅš


½ cup chopped pecans ๐Ÿฅœ



For the cheesecake filling:


8 oz cream cheese, softened ๐Ÿง€


¼ cup granulated sweetener ๐Ÿฏ


1 egg ๐Ÿฅš


1 tsp vanilla extract ๐ŸŒฟ



For the topping:


½ cup cream cheese, softened ๐Ÿง€


2 tbsp heavy cream ๐Ÿฅ›


2 tbsp powdered sweetener ๐Ÿฏ


½ cup chopped pecans ๐Ÿฅœ



Instructions:


1️⃣ Preheat oven to 350°F (175°C). Grease a bundt pan. ๐Ÿบ๐Ÿ”ฅ

2️⃣ Make the batter: In a bowl, mix almond flour, sweetener, baking powder, and salt. Add melted butter, eggs, and vanilla extract. Stir well. ๐Ÿฅฃ๐Ÿฅ„

3️⃣ Prepare the filling: In another bowl, beat cream cheese, sweetener, egg, and vanilla until smooth. ๐ŸŽ‚✨

4️⃣ Assemble: Pour half of the cake batter into the bundt pan. Spread the cheesecake mixture on top, then cover with the remaining batter. ๐Ÿ—️๐Ÿง€

5️⃣ Bake for 40-45 minutes until golden brown. Let it cool. ⏳๐Ÿฅฎ

6️⃣ Make the topping: Whisk cream cheese, heavy cream, and sweetener. Spread over the cooled cake and sprinkle with chopped pecans. ๐ŸŒฐ๐Ÿฐ
