Cheesy Chicken and Potato Bake Recipe

Ingredients

  • 4 medium potatoes, peeled and diced
  • 2 cups cooked shredded chicken
  • 2 cups shredded mozzarella cheese

Instructions

Step 1: Prepare the Potatoes

Preheat your oven to 375°F (190°C). Peel and dice the potatoes into bite-sized cubes. Boil them in salted water for 8–10 minutes until just tender but not fully cooked. Drain and set aside.

Step 2: Cook the Chicken Mixture

Heat the butter and olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3–4 minutes. Stir in the garlic and cook for another minute. Add the shredded chicken, paprika, onion powder, garlic powder, Italian seasoning, salt, pepper, and parsley. Cook for 2–3 minutes, then remove from the heat.

Step 3: Make the Cream Sauce

In a large mixing bowl, whisk together the heavy cream, sour cream, softened cream cheese, eggs, and Parmesan cheese until smooth and creamy.

Step 4: Assemble the Bake

Lightly grease a 9×13-inch baking dish.

  • Spread the potatoes evenly on the bottom.
  • Add the seasoned chicken mixture.
  • Sprinkle 1 cup mozzarella cheese.
  • Pour the creamy sauce over everything.
  • Top with the remaining mozzarella and cheddar cheese.
