Cheesy Chicken and Potato Bake Recipe
Ingredients
For the Casserole
- 4 medium potatoes, peeled and diced
- 2 cups cooked shredded chicken
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
For the Creamy Sauce
- 1 cup heavy cream
- 1 cup sour cream
- 4 oz (115 g) cream cheese, softened
- 2 large eggs
- ½ cup grated Parmesan cheese
Instructions
Step 1: Prepare the Potatoes
Preheat your oven to 375°F (190°C). Peel and dice the potatoes into bite-sized cubes. Boil them in salted water for 8–10 minutes until just tender but not fully cooked. Drain and set aside.
Step 2: Cook the Chicken Mixture
Heat the butter and olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3–4 minutes. Stir in the garlic and cook for another minute. Add the shredded chicken, paprika, onion powder, garlic powder, Italian seasoning, salt, pepper, and parsley. Cook for 2–3 minutes, then remove from the heat.
Step 3: Make the Cream Sauce
In a large mixing bowl, whisk together the heavy cream, sour cream, softened cream cheese, eggs, and Parmesan cheese until smooth and creamy.
Step 4: Assemble the Bake
Lightly grease a 9×13-inch baking dish.
- Spread the potatoes evenly on the bottom.
- Add the seasoned chicken mixture.
- Sprinkle 1 cup mozzarella cheese.
- Pour the creamy sauce over everything.
- Top with the remaining mozzarella and cheddar cheese.
Step 5: Bake
Bake for 35–40 minutes, or until the cheese is melted, bubbly, and golden brown. If you want a crispier top, broil for 2–3 minutes at the end.
Step 6: Serve
Let the casserole rest for 10 minutes before cutting into squares. Garnish with fresh parsley and serve with a green salad, roasted vegetables, or warm garlic bread.
