LEMON MOUSSE PARFAITS
INGREDIENTS
LEMON CURD:
- 1/2 CUP FRESH LEMON JUICE
- 1 TBSP LEMON ZEST
- 1/2 CUP SUGAR
- 3 LARGE EGGS
- 1/4 CUP UNSALTED BUTTER (CUT INTO PIECES)
WHIPPED CREAM:
- 1 CUP HEAVY CREAM
- 2 TBSP POWDERED SUGAR
- 1/2 TSP VANILLA EXTRACT
OPTIONAL BASE:
- 1 CUP CRUSHED GRAHAM CRACKERS OR COOKIES
- 2 TBSP MELTED BUTTER
INSTRUCTIONS
1. MAKE LEMON CURD:
WHISK TOGETHER LEMON JUICE, ZEST, SUGAR, AND EGGS IN A SAUCEPAN.
COOK OVER MEDIUM-LOW HEAT, STIRRING CONSTANTLY, UNTIL THICKENED (ABOUT 5–7 MINUTES).
REMOVE FROM HEAT, ADD BUTTER, AND STIR UNTIL SMOOTH.
LET COOL AND REFRIGERATE.
2. MAKE WHIPPED CREAM:
BEAT HEAVY CREAM, POWDERED SUGAR, AND VANILLA UNTIL SOFT PEAKS FORM.
3. PREPARE BASE (OPTIONAL):
MIX GRAHAM CRACKERS WITH MELTED BUTTER.
PRESS INTO THE BOTTOM OF SERVING GLASSES.
4. ASSEMBLE PARFAITS:
LAYER WHIPPED CREAM, LEMON CURD, AND MORE WHIPPED CREAM IN GLASSES.
REPEAT LAYERS IF DESIRED.
CHILL AT LEAST 1 HOUR BEFORE SERVING.
