Here’s a super easy and delicious Cake Mix Coffee Cake recipe — buttery, cinnamon-swirled, and perfect for breakfast or brunch!


Cake Mix Coffee Cake

Ingredients:

Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 1 cup sour cream
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 tsp vanilla extract

Cinnamon Swirl:

  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • Optional: 1/2 cup chopped nuts (pecans or walnuts)

Streusel Topping (optional but awesome):

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold butter, cubed

Glaze (optional):

  • 1 cup powdered sugar
  • 1–2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.

  2. Mix Cake Batter:
    In a large bowl, beat together the cake mix, sour cream, eggs, oil, water, and vanilla until smooth.

  3. Layer Cake & Cinnamon Swirl:

    • Pour half of the batter into the pan.
    • Mix brown sugar and cinnamon (and nuts if using). Sprinkle over the batter.
    • Add the remaining batter and gently swirl with a knife.
  4. Add Streusel (if using):

    • Combine flour, brown sugar, and cinnamon. Cut in butter until crumbly.
    • Sprinkle evenly over the batter.
  5. Bake:
    Bake for 35–40 minutes, or until a toothpick comes out clean. Let cool slightly.

  6. Drizzle Glaze (if using):
    Mix glaze ingredients and drizzle over warm (not hot) cake.


Tips:

  • You can use spice cake mix or butter pecan mix for a flavor twist.
  • Add diced apples or a ribbon of cream cheese for extra richness.
