35 minutes

Total Time:

50 minutes

Servings:

4 to 6 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and diced
  • 2 cups broccoli florets
  • 1 zucchini, chopped
  • 1 small leek, sliced
  • 1/2 cup green beans, chopped
  • 1/2 cup corn kernels
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice, optional

Instructions

1. Sauté the aromatics

Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 3 to 4 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.

2. Add the vegetables

Add the carrots, celery, potatoes, leek, and zucchini to the pot. Stir well and let them cook for about 5 minutes so they begin to soften and absorb the flavor of the onion and garlic.

3. Pour in the broth

Add the vegetable broth, then season with salt, black pepper, thyme, oregano, and the bay leaf. Stir everything together and bring the soup to a gentle boil.

4. Simmer the soup

Reduce the heat to low and let the soup simmer for about 20 minutes. This allows the potatoes and carrots to become tender and the broth to develop a rich flavor.

5. Add the remaining vegetables

Add the broccoli florets, green beans, and corn. Continue cooking for another 8 to 10 minutes, or until all the vegetables are tender but still bright and fresh.

6. Finish and serve

Remove the bay leaf. Stir in the fresh parsley and lemon juice if using. Taste the soup and adjust the seasoning if needed. Serve hot in bowls and enjoy.

Tips for the Best Vegetable Soup

  • Cut the vegetables into similar sizes so they cook evenly.

  • You can add pasta, rice, or beans if you want a heartier soup.
  • A sprinkle of Parmesan cheese on top adds extra flavor if you are not making it vegan.

Storage

Store leftover soup in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stove or in the microwave. This soup also freezes well for up to 2 months.

Buttery Twisted Pastry Rolls

Prep Time:

25 minutes

Resting Time:

1 hour 30 minutes

Cook Time:

20 minutes

Total Time:

2 hours 15 minutes

Servings:

10 to 12 pastries

Ingredients

For the Dough:

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup warm milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted

For Layering:

  • 1/2 cup unsalted butter, softened

For Brushing:

  • 1 egg yolk
  • 1 tablespoon milk

For Finishing:

  • Powdered sugar, for dusting

Instructions

1. Activate the yeast

In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Stir gently and let it sit for about 5 to 10 minutes until it becomes foamy. This step helps ensure the yeast is active and ready to make the dough rise.

2. Make the dough

In a large mixing bowl, combine the flour, remaining sugar, and salt. Add the yeast mixture, eggs, vanilla extract, and melted butter. Mix everything together until a soft dough begins to form.

3. Knead the dough

Transfer the dough to a lightly floured surface and knead for about 8 to 10 minutes until smooth and elastic. If the dough feels too sticky, add a little more flour, one tablespoon at a time, but avoid adding too much so the pastries stay soft.

4. First rise

Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

5. Roll and layer the dough

Once the dough has risen, punch it down gently and divide it into 2 equal parts. Roll each part into a rectangle. Spread a thin layer of softened butter over the surface of each rectangle. Fold the dough over itself a few times to create light layers, then roll it out again gently.

6. Shape the pastries

Cut the dough into strips or rectangles, depending on the shape you want. Twist each strip and form it into a loose ring or curved roll shape. Arrange the shaped pastries on a baking tray lined with parchment paper, leaving some space between them.

7. Second rise

Cover the shaped pastries lightly and let them rise again for 30 minutes. This will help them become softer and puffier before baking.

8. Brush before baking

In a small bowl, whisk together the egg yolk and 1 tablespoon of milk. Brush this mixture over the pastries to give them a shiny, golden finish.

9. Bake

Preheat your oven to 375°F (190°C). Bake the pastries for 18 to 22 minutes, or until they are beautifully puffed and golden brown.

10. Cool and finish

Remove the pastries from the oven and let them cool slightly on a wire rack. Dust generously with powdered sugar before serving.

Serving Suggestions

These buttery twisted pastries are delicious served with:

  • Hot coffee
  • Tea
  • Warm milk
  • Hot chocolate
  • Fruit jam
  • Honey
  • Soft cream cheese

Tips for the Best Pastries

  • Make sure the milk is warm, not hot, so it does not kill the yeast.
  • Use softened butter for layering to make spreading easier.
  • Do not overfill or overwork the dough, or the layers may not stay light.
  • Bake until just golden for a soft and tender texture.
  • Dust with powdered sugar only after the pastries have cooled slightly.

Optional Variations

You can easily customize these pastries by adding:

  • Cinnamon sugar
  • Chocolate spread
  • Fruit jam
  • Sweet cream cheese filling
  • Lemon zest
  • Vanilla glaze instead of powdered sugar

Storage

Store the pastries in an airtight container at room temperature for up to 2 days. For longer storage, keep them in the refrigerator for up to 4 days. Reheat gently before serving for the best texture. They can also be frozen for up to 1 month.

Conclusion

These buttery twisted pastry rolls are soft, light, golden, and absolutely irresistible. They have the perfect balance of sweetness and buttery richness, making them ideal for breakfast, brunch, or dessert. Their elegant twisted shape makes them look bakery-style, while the homemade flavor makes them even better. Whether you enjoy them fresh with coffee in the morning or serve them to guests as a sweet treat, these pastries are sure to become a favorite in your kitchen.

⏱️ Time & Servings

  • Prep Time: 25 minutes
  • Cook Time: 20 minutes
  • Chill Time: 1 hour
  • Total Time: 1 hour 45 minutes
  • Servings: 6–8

🛒 Ingredients

For the Puff Pastry:

  • 2 sheets puff pastry (thawed if frozen)
  • 1 egg (for egg wash)
  • 1 tablespoon powdered sugar (for dusting)

For the Cream Filling:

  • 1 ½ cups heavy whipping cream (cold)
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Berry Filling:

  • 1 cup berry jam (strawberry, raspberry, or mixed berries)
  • Optional: fresh berries for extra texture

For Decoration:

  • Fresh strawberries, raspberries, blueberries
  • Mint leaves (optional)
  • Powdered sugar

👨‍🍳 Instructions

1. Prepare the Puff Pastry

Preheat your oven to 200°C (400°F). Roll out the puff pastry slightly and cut it into round shapes (or keep it rectangular if you prefer). Lightly score the top layer into sections (like slices) without cutting all the way through—this will make slicing easier later. Brush with beaten egg and bake for 15–20 minutes or until golden brown and puffed. Remove from the oven and let it cool completely.

2. Make the Whipped Cream

In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat using a mixer until soft peaks form. Be careful not to overwhip—the texture should be smooth and fluffy. Keep refrigerated until ready to use.

3. Assemble the Cake

Once the puff pastry has cooled, carefully slice it horizontally into two layers. Place the bottom layer on a serving plate. Spread a generous layer of whipped cream evenly over the pastry. Then add a thick layer of berry jam on top of the cream. If you like, add a few fresh berries for extra freshness and texture.

Gently place the top layer of pastry over the filling.

4. Decorate

Pipe or spread whipped cream on top of the cake. Garnish with fresh berries in the center and add a few mint leaves for a fresh touch. Finish by lightly dusting powdered sugar over the top for an elegant, bakery-style look.

🍰 Tips

  • Always use cold cream for best whipping results.
  • Let the pastry cool completely before assembling to avoid melting the cream.
  • Chill the cake for at least 1 hour before serving for better structure and flavor.
  • Use high-quality jam for a richer taste.
